Beignets, biscochetos, and burritos

Big news, y’all! Yesterday we finished the final component of our Spanish visa application documentation. Holy cannoli! It’s been quite a ride so far. Next up is a drive down to Miami to drop off our application materials at the Spanish Consulate on June 17.

Speaking of rides, we’ve been on the road for a week now and are currently hanging out in our favorite Airbnb in Albuquerque (or Burque, as the rebrand is calling for). It’s 101 degrees Fahrenheit outside and there’s not a cloud in the sky.

Our travels have taken us through Baton Rouge, Louisiana where we enjoyed sugary beignets and an enormous breakfast biscuit, and on to San Antonio for the night. We spent a couple of days visiting friends and eating burritos in Marfa, TX before heading north to New Mexico for some downtime and biscochetos, a butter cookie flavored with cinnamon and anise (a spice that neither of us particularly enjoys) that happens to be New Mexico’s official state cookie.

Radio channel surfing has had us singing along to classic songs from the 80s like UB40’s “The Way You Do the Things You Do,” Lionel Ritchie’s “Dancing on the Ceiling,” and “Word Up” by Cameo.

We’ve seen a number of American flag tank tops, gun racks, and meat smokers, as well as gorgeous landscape vistas that make us feel like we’re driving through photos from a 90s motivational poster. (Remember those? Ha!)
